Camper’s Crisp for dessert

This Crisp is a perfect dessert after a day of hiking, swimming, and doingther  assorted camping related activities.  Loaded with fruit, this Crisp is what we need for dessert to finish off our dinner.  For my family, a Crisp is the  perfect ending to any day.  At home we might add a scoop of ice cream but out in a national forest, a big soup spoon is all we need.

Camper’s Crisp

Melt a pad of butter or margarine in a skillet.  Add prepared fresh fruit (I use cherries, halved and pitted but sliced peeled apple works well, too) to skillet.  If you have, and want, sprinkle some sugar and stir to mix.  Cook until fruit is tender.  Sprinkle cookie crumbs over the crisp and serve hot

Although this recipe uses fresh fruit, dried works also.  You will need to re-hydrate by putting the fruit in the skillet, almost cover with water and bring to a boil.  Move to a cooler part of the campfire and allow to simmer until fruit is plumb and tender.  Follow the above recipe.  It is likely you will not need to add any or as much sugar.

FYI, dried blueberries are a good choice after a day on a challenging trail.  Dried blueberries pack a nutritional punch. They are low in sodium and in calories, offering 127 calories per one-quarter cup, and they contain no cholesterol.  Blueberries are known for their high concentration of antioxidants, but studies suggest blueberries may be the most powerful. Antioxidants protect the body from free radicals, or cells that have the potential to become dangerous and degenerative.
