Is there anything better than a bowl of hot homemade soup on a cold day?\u00a0\u00a0No matter were you are, at home or camping in national forest, cold weather calls for a bowl of hot homemade soup, thick with veggies, just as a day building snowmen calls for a mug of hot cocoa.<\/p>\n
I love this recipe from my 7th grade Home Economic’s class.\u00a0 Truly a “go to” recipe since you can use whatever leftovers and vegetables are in the house.\u00a0 My soup tends to reflect the season.\u00a0 This time of year its a medley celery, potato, carrot, and onion with leftover cooked chicken or turkey.\u00a0 My advice is to just go for it and enjoy.<\/p>\n
Cream of Whatever Soup<\/b>
\nserves 4<\/p>\n
2 C. diced or sliced vegetable(s)
\n\u00bd onion, chopped
\n3 T. each butter\/margarine and flour
\n3 C. milk and\/or bouillon
\nsalt, pepper, and chopped parsley
\nDash of freshly ground nutmeg – optional<\/p>\n
Cook vegetable and onion in 1 C of water until tender.\u00a0 Melt butter and blend in flour, then add milk and cook, stirring till thickened.\u00a0 Add cooked vegetable and a handful of leftover meat if desired in liquid.\u00a0 Heat gently, and season to taste.<\/p>\n
