Quik Chicken Pilaf

My philosophy is, when camping, the cook is on vacation, too.  Quik Chicken Pilaf is one of those quick, easy, filling, delicious, go to recipes that has be one of my staple recipes for many a camping trip.

Get your campfire going and set a pot over the hot coals. Cut a chicken breast or 4 chicken thighs, boneless and skinless, into bite-size pieces. When the pot is hot (sprinkle some water droplets in the bottom of the pot and if the drops “dance” the pot is ready) add the cut up chicken. Brown the chicken on all sides. Toss in a handful or two of raisins. Leave chicken in the pot and add a box of wild and white rice (I like Uncle Ben’s) to the pot, preparing according to the package direction. Give the pot a stir before serving.   Serves 4 or 6 if you serve it with a nice mixed green salad.
